Put 52 oz of unsalted butter in a bowl and whisk it well until it becomes like a cream.
Add 3/4 cup of powdered sugar, 1 teaspoon of vanilla essence, 1 cup of all-purpose flour, 1/4 teaspoon of baking powder, and a pinch of salt to the butter. Mix everything until well combined.
Apply some flour to your hands to avoid sticking, then bring everything together.
Take one cup of cornflakes, place them on a plate, and crush them with your hands. You can also put it inside a ziplock bag and use a rolling pin to crush them into pieces.
Divide the dough into 16 portions and form each one into balls. Coat each piece with crushed cornflakes. After that, place them in a lined baking tray. Make sure there is enough space between each piece as they will flatten as they bake.
Place in a preheated oven at 356F and bake for about 20 to 25 minutes.
Once done, remove the cookies from the tray and let them cool on a cooling rack. Serve and enjoy!
