This impossible pie recipe by Joy of Baking on YouTube is actually very easy to do, so don’t get discouraged by its name and try to bake it today. This decadent and mouth-watering recipe is what I always use and serve to family and friends, it never fails to amaze them. That’s why I’m sharing this incredible tutorial with you, I hope you enjoy baking this as much as I did.

Ingredients:

  • 4 large Eggs, room temperature
  • 1 cup (200 grams) Granulated white sugar
  • ½ cup (65 grams) All-purpose flour
  • ¼ teaspoon (1 gram) Salt
  • ¼ teaspoon (1 gram) Baking powder
  • ½ cup (113 grams) Butter, melted and cooled to room temperature
  • 2 cups (480 ml) Whole or full-fat milk, room temperature
  • 2 teaspoons (8 grams) Pure vanilla extract
  • 1¼ cups (125 grams)  Sweetened dried coconut, shredded or flaked

Directions:

Step 1

Using a blender or a food processor, combine the eggs, granulated white sugar, all-purpose flour, salt, baking powder, butter, whole or full-fat milk, pure vanilla extract, mix all the ingredients together until uniform. Once they are well-combined, stir in the coconut. If you don’t have a blender or food processor, or you simply want to do this by hand, simply add the ingredients to a large bowl, and whisk them one by one.

Step 2

Use a non-stick cooking spray or butter to grease a 10-inch (25 cm) pie pan that is about 2 inches (5 cm) deep. Then, pour in the batter, and bake it in a preheated oven at 350°F (180°C) for about 55 to 60 minutes or until the top is golden brown. You can check whether the pie is ready by inserting a toothpick into the center of the pie, when it comes out clean, then it is ready. If you gently shake the pan the pie will be set. Remove it from the oven and place it on a wire rack until it’s completely cool.
