Step 1
Add the long-grain rice to a pot, then add the salt and cold water, and place it on a stove over medium-high heat. Bring it to a boil, then reduce the heat setting to low, and cover the pot. Let it cook for 20 more minutes until the rice is soft and fluffy. Turn off the heat, then add the sugar and pour the milk, using a whisk, stir them all together for about 1 to 2 minutes or until the bottom is clean and deglazed. Put it back on the stove over medium heat and continue cooking it while stirring consistently for about 10 minutes or until to desired thickness.

Step 2
Turn off the heat, then add the cinnamon, vanilla extract, and egg yolk, and stir them together until incorporated and uniform. Next, add the butter and dried fruit, then stir them together until well combined. While the rice pudding is still warm, transfer it to serving cups and tap it a couple of times to squeeze the mixture in and remove any air bubbles inside. Let it cool for a few minutes, then wrap it with plastic or cling wrap, and put it in the fridge to chill before serving. Dust it with some cinnamon or top it with fresh fruit, then serve, and enjoy!
