There are a couple of people I know who do not like okra because of its slimy texture. If you are one of those, you have to try this okra and tomato stew recipe by caribbeanpot. You will not notice the sliminess of the okra with this recipe. Not only is it delicious and simple to prepare, but it is also affordable, so you can make it all year round.

Most of the ingredients you need for this dish are basic and cheap. For this recipe, choose the fresh small okra pods and not the bigger ones so they won’t be slimy. It is super easy to make and ready in just a few minutes. You can serve it with rice, smoked sausage, cornbread, fish, pork chops, and a lot more.

Cut the bottom and top part of the okra, then slice into 1/2″ pieces. Once done, wash and air dry.
Place a large pan over heat and add 3 tablespoons of vegetable oil. Once hot, add the sliced okra and cook for 5 to 7 minutes. Transfer to a plate.
In the same pan over low heat, add 1 tablespoon of vegetable oil, then the diced onion. Cook for a few seconds.
Add the roughly chopped garlic, fresh thyme, some pepper flakes and freshly ground black pepper. Keep on mixing and cook until soft.
Make some space on the center of the pan, then add tomato puree and mix it in. Season with salt, then add the stewed tomato. Break them a little bit, then add the bay leaf, red wine vinegar, and brown sugar. Mix until well combined. Turn the heat to medium low.
Add the chicken stock and let it come to a rolling boil for about 8 to 10 minutes.
Add the cooked okra back to the pan and give it a stir. Remove the thyme and let it simmer for 5 minutes or more. Remove the bay leaf and serve. Enjoy!
