This oatmeal lemon bars recipe by Joy of Baking has a crumbly top and bottom crust with a delicious filling. I can say that these are the best and easiest lemon squares I made at home! Ingredients:

For the crust:

  • 1/2 cup of butter (melted, room temperature)
  • 1 cup of rolled oats
  • 1/2 cup of walnuts (coarsely chopped)
  • 1/2 cup of dried coconut
  • 1 cup of all-purpose flour
  • 1/2 cup of packed light brown sugar
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of pure vanilla extract

For the lemon filling:

  • 1 can (14 oz) of sweetened condensed milk
  • 1/2 cup of lemon juice
  • lemon zest (1 lemon)

 

Note: If you are going to use salted butter, do not add salt.

Instructions:

Step 1:

Preheat the oven to 350 degrees F or 180 degrees C. Line a 9-inch square baking pan with foil then brush it with some melted butter.

Step 2:

In a food processor, add 1 cup of rolled oats, 1/2 cup of walnuts, 1/2 cup of dried coconut, 1 cup of all-purpose flour, 1/2 cup of packed light brown sugar, and 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Grind all the ingredients together until fine. If you don’t have a food processor you can mix it in a large bowl but make sure to chop the walnuts finely.

Step 3:

Pour the melted butter and 1 teaspoon of pure vanilla extract into the dry mixture. Pulse it until it becomes crumbly.

Step 4:

Put some of the crumbs into the bottom of the lined pan using your hands or the back of the spoon.

Step 5:

In a different bowl, add the sweetened condensed milk, lemon juice, and lemon zest. Mix everything using a whisk. Once done, put the filling over the crust. Spread into the corners using a spatula. Sprinkle the remaining crumbs on top.

Step 6:

Place in the preheated oven and bake for 25-30 minutes or until golden brown.

Step 7:

Once done baking, place in a cooling rack and let it cool completely. Once cooled, lift it out by taking the ends of the foil then slice it into pieces.
