This oatmeal lemon bars recipe by Joy of Baking has a crumbly top and bottom crust with a delicious filling. I can say that these are the best and easiest lemon squares I made at home! It has the perfect balance of sweetness and tanginess that will surely make your mouth water. The texture and the flavors are just so good. Preheat the oven to 350 degrees F or 180 degrees C. Line a 9-inch square baking pan with foil then brush it with some melted butter.
In a food processor, add 1 cup of rolled oats, 1/2 cup of walnuts, 1/2 cup of dried coconut, 1 cup of all-purpose flour, 1/2 cup of packed light brown sugar, and 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Grind all the ingredients together until fine. If you don’t have a food processor you can mix it in a large bowl but make sure to chop the walnuts finely.
Pour the melted butter and 1 teaspoon of pure vanilla extract into the dry mixture. Pulse it until it becomes crumbly.
Put some of the crumbs into the bottom of the lined pan using your hands or the back of the spoon.
In a different bowl, add the sweetened condensed milk, lemon juice, and lemon zest. Mix everything using a whisk. Once done, put the filling over the crust. Spread into the corners using a spatula. Sprinkle the remaining crumbs on top.
Place in the preheated oven and bake for 25-30 minutes or until golden brown.
Once done baking, place in a cooling rack and let it cool completely. Once cooled, lift it out by taking the ends of the foil then slice it into pieces.
