This energy bar is healthy and does not contain any granulated sugar. It is packed with oats, dried fruits, seeds, and dates, giving a variety of textures and flavors in each bite. I love making this granola energy bar on busy weeks, as I can easily grab one and go. It gives you the energy boost to start your day.

Add 2 cups of oats in a pan over low heat. Roast until crisp. Transfer to a bowl.
In the same pan, add 1 cup of almond, 1/2 cup of pumpkin seeds, and 1/2 cup of sunflower seeds. Roast over low flame until crunchy. Transfer to the same bowl as the roasted oats.
Add 1/2 cup of cranberries and chopped dried apricots. Mix until well combined.
In a food processor, add 2 cups of dates and 2 tablespoons of water. Process until it becomes a smooth paste.
Add the date paste and 1/2 cup of peanut butter to the same pan over low heat. Mix until well combined. Cook for 5 minutes until smooth and shiny. Transfer to the same bowl as the oats, nuts, and dried fruits.
Add 1/4 cup of honey, 1 teaspoon of vanilla extract, and a pinch of salt. Mix with your hands until well combined.
Line a baking pan with parchment paper, then transfer the mixture. Press and spread evenly. Flatten the top as much as you can. Refrigerate for 4 hours.
Once set, cut it into bars. Serve and enjoy.
