Aside from watermelons, apricots are also in season. They are available from early May to July. Apricots are the best during these months, so make sure to enjoy this fruit while they are freshly available in markets.
Whenever I have a ton of apricots at home, I make them into these healthy apricot bars. I learned this recipe from olich recipes on YouTube. These treats do not contain any sugar, so they are definitely good for you.

Apricots and dates have a sweet taste that is perfect with the nutty flavors of almonds and coconut flakes. You don’t need any binding ingredients, like honey, for this recipe, as the apricots and dates have a sticky consistency when blended. These homemade bars are yummy, easy to make, and only require five ingredients. Give these treats a try while apricots are in season.

In three different bowls, soak the dried apricots, dried dates, and almond in cold water for 15 minutes.
After 15 minutes, strain the apricots and dates and dry with paper towel. Remove the seeds from the dates. Strain the almonds and toast in a pan.
In a food processor or blender, add the apricots and dates. Blend until mushy. Transfer to a bowl.
Add the toasted almonds and oatmeal into the food processor or blender. Blend until it forms into crumbs. Transfer to the same bowl as the apricot and date mixture. Mix until well combined using your hands.
Transfer to a baking dish lined with parchment paper. Flatten using a spatula or any flat object. Place in the fridge for 2 hours.
Slice into squares. Serve and enjoy!
