I love homemade fruit pies, but I hate making pastry crusts – that is why I buy already-made ones from the grocery whenever I make pies at home. While browsing Youtube the other day, I bumped into this no-roll and press-in crust pie from Ken Haedrich. This recipe just made my life so much easier! Now, I don’t need to buy pie crusts in the grocery; I can finally make my own in the comforts of my home. Watch the video below if you want to learn this fantastic recipe.

Ingredients:

  • 1 3/4 cups of all-purpose flour (preferably cold flour)
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 11 tbsp cold unsalted butter, cut into 1/2″ cubes
  • 2 1/2 tbsp cold water

Directions:

Step 1

Into your food processor, add 1 3/4 cups of all-purpose flour, 2 tbsp sugar, and 1/2 tsp salt. Put the lid on and give it a quick mix to combine. Next, add 11 tbsp cold unsalted butter cut into 1/2″ cubes then give it seven one-second pulses to break the butter into small bits. After this, add 2 1/2 tbsp cold water evenly over the mixture. Put the lid back on and continue to pulse the machine as many times as necessary until the mixture has the consistency of damp sand.

Step 2

Now, lightly grease your pie pan with butter, then transfer the mixture over. Spread it around evenly and make a thick berm around the sides. Press the mixture lightly at first, and when you’re sure everything is evenly distributed, start to press more firmly. When you’re done, drape a piece of plastic wrap over the shell and give it a final firm pressing all around. (Make sure to square off the bottom crease where the pan folds are.) Refrigerate the pie shell for at least an hour before using it.
