Get a large bowl. Add 2 and 1/2 cups of all-purpose flour, 1/4 teaspoon of instant or dry active yeast, and 1 teaspoon of salt. Mix all the ingredients, then stir in the water. The mixture will have a thick and sticky mixture.
Cover the bowl with plastic wrap and let it stand on the countertop for about 3 hours.
After 3 hours, the mixture will be puffy and bubbly. Transfer the dough to a floured surface. Fold it over about 12 times using a scraper. Add about 2 tablespoons of flour so it doesn’t stick.
Cut the dough into 8 pieces with a scraper. Flour your hands and shape each into a ball by folding and tucking.
Place the balls into a baking sheet lined with parchment paper (not wax paper). Cover it with a dish towel. Set it aside at room temperature for about 35 minutes. The balls will puff up but will not double in size.
Preheat the oven to 450F.
Place inside the preheated oven and bake for 25 to 30 minutes until golden brown.
If you want to re-crisp the next day, preheat the oven to 325F, then place the rolls directly on the oven rack for about 10 to 12 minutes.
