Completely defrost your turkey in the fridge two to four days before Thanksgiving. Once your turkey is ready, it’s time to prep it. First, remove the packet of giblets that are found in the neck part, then cut off any excess skin around this area. In the large body cavity, remove the neck, then cut off the tail. After this, let the turkey rest at room temperature for an hour while you prep and chop the other ingredients.

Once your turkey is done resting, season the inside with a generous amount of kosher salt and ground black pepper. After this, place the chopped onion and lemon wedges inside the cavity along with a few sprigs of fresh thyme, rosemary, and sage.
For the herb butter, combine 3/4 cup of softened butter, 1 tbsp freshly chopped thyme, 1 tbsp freshly chopped rosemary, six cloves of minced garlic, 1 tsp kosher salt, and 1/2 tsp ground black pepper. Mix well together. Now, pat your turkey dry with some paper towel, then loosen the skin of the turkey by slowly running your fingers underneath. Take about 1/3 of the herb butter and rub it under the loose skin, then rub the rest of the herb butter on the outside of the turkey.
Preheat your oven to 325 degrees F. Next, put the chopped veggies at the bottom of the pan, then position the turkey on top. Place it in the preheated oven and put the meat thermometer into the thickest part of the breast or thigh. Roast the turkey for 15 minutes per pound or until the internal temperature is 158 to 160 degrees F. Once done roasting, remove the turkey and let it rest for at least 30 minutes.
