I used to think of a cheesecake as being one of the most difficult foods to make, but when there is no baking involved, the cheesecake becomes a very simple icebox pie type of recipe. When I found this no-bake strawberry cheesecake video recipe tutorial by El Mundo Eats, on YouTube, I was so excited about the bending of two of my favorite flavors. This recipe is super simple to follow, and has some really simple ingredients too! This recipe is so delicious, it reminded me of the delicious lemon ice-box pie we used to eat at Luby’s Cafeteria in Texas.

For The Crust:

  • 7-ounces of Oreo Cookies
  • 1/4 cup of butter (melted)

For The Strawberry Coulis:

  • 1 1/2 teaspoons of powdered gelatin
  • 2 tablespoons of lemon juice
  • 10.5 ounces of strawberries
  • 1/4 cup of sugar
  • 2 tablespoons of cornstarch

For The Filling:

  • 13 ounces of cream cheese (softened)
  • 2/3 cup of icing sugar
  • 1 teaspoon of vanilla extract
  • 2/3 cups of whipping cream
