This no-bake soft and fluffy cheese bread by Qiong Cooking will surprise you! It’s one of the best bread I have ever made at home. In a mixing bowl, add 3 eggs, 1/4 cup of oil, 4 tablespoons of sugar, and 1 teaspoon of instant yeast. Whisk until well combined. Set it aside and let it rest for 5 minutes.
Add 2 cups of all-purpose flour and mix with a silicone spatula until it forms a dough.
Knead the dough with your hands until it’s medium firm. Cover it with plastic and let it rest for 20 minutes.
After 20 minutes, knead the dough a few times to make it smooth, then put it into a bowl and cover it with plastic wrap. Let the dough rise for about an hour until it doubles in size.
After an hour, poke the dough. If it doesn’t spring back, it’s ready. Place it on your work surface and fold it a few times. Form into an oval and divide into 16 small pieces about the same size. Instantly cover the dough with plastic wrap after dividing.
Take one of the dough and roll it. Fold it several times, then roll it again. Fold it in half and roll it – it should be thick in the middle and thin on the sides. Add the mozzarella cheese and pinch the dough to close. Roll and press it with both palms. Place it on a mat covered with plastic wrap. Repeat for the remaining dough.
Let the dough rise for about 40 minutes or longer, depending on the room temperature.
Place a pan over low heat. Put the dough circles directly in the pan without oil. Cover it with the lid and cook for 5 minutes or until golden brown. Flip them, cover them again, and cook the other side for 5 minutes more. Turn off the heat and cover for 3 minutes so they won’t shrink back.
