Thanksgiving and Christmas are just a few weeks away, I’ve already begun looking for recipes that I think would make my dinner table extra special this year. The first thing that came to my mind is cheesecake, my sister and I love eating this dessert, we would always order this wherever restaurant or café we’re at. That’s why I thought, why not try and make it? The only problem is that I don’t have the equipment to do this. Lucky enough, I found this tutorial by Maria Emmerich. Turns out you can make cheesecakes without baking them, I did my first of this recipe, and boy did it not disappoint. Go ahead and try this recipe too, I’m sure you won’t regret it!
Cheesecake
Praline Crust
Step 1:
In a pot or a microwave-safe bowl, pour 1 cup of Almond Milk and sprinkle 3 teaspoons of gelatin. Heat the pot on a stove and whisk the ingredients continuously to avoid clumps. Turn off the heat once the gelatin simmers.
Step 2:
Put 5 blocks of softened cream cheese in a bowl, add 1 1/2 cup of confectioner’s sugar. Using a hand mixer, combine the ingredients then add vanilla or almond extract.

Step 3:
Pour the simmered gelatin onto the cream cheese mixture, add salt then continue mixing. Once you’re done, pour it on a silicone mold then put it in the freezer to let it set.
Step 4:
For the praline, put your pot in a high heat setting before adding your butter. Using a whisk, brown your butter while mixing continuously. Add sweetener, cinnamon, and 1 cup pecans.
Step 5:
Take your cheesecake from the freezer and pour the praline mixture on top, spread it out nicely then put it back in the fridge to set. Before serving, transfer the cheesecake onto a plate by flipping it upside down.
