In a large bowl, add a 2/3 cup of water, 1 teaspoon of active dry yeast, and 1 tablespoon of sugar. Mix the ingredients.
Add 1 2/3 cups of flour into the bowl, followed by 1/2 teaspoon of salt. Stir until a dough forms.
Add 1 tablespoon of olive oil to the dough and knead until smooth.
Cover it with the lid until it doubles in size.
Peel and slice the potatoes into medium-sized cubes. Place the potatoes in a big pot and add 20.3 oz of water until they are fully submerged. Let it cook for about 15 to 20 minutes.
Strain the potatoes and mash well. Add 2 tablespoons of milk, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of red pepper powder. Mix until well incorporated. Add the diced green onion and cheese to the potato mixture and combine well. Cover it with a lid and let it sit for about 1.5 hours.
Remove the gas from the dough, form it into a round shape on a floured surface, and flatten it with a rolling pin. It must be 7.9 inches in diameter.
Take the mashed potato mixture and place it in the center of the flattened dough. Pinch the sides upward towards the center to close. Flatten it into an 8.7 to 9.8 inches diameter circle, then cover it.
Place a pan over low heat and add some oil. Place the dough, cover the pan with the lid and let it fry for 3 minutes. Once done, flip it and cook the other side for another 3 minutes with the lid on.
Slice into pieces and serve. Enjoy!
