  • 1 & 1/3 cups (400g) of sweetened condensed milk
  • 1/2 cup of lemon juice
  • 400g can of crushed pineapple, drained
  • 1 & 1/4 cups (300ml) of whipping cream

Directions:

Step 1

Add 2 cups of crushed plain sweet cookies and 1/4 cup + 3 tbsp of melted butter in a bowl. Stir together until the texture looks like wet sand. Add this to a greased springform tin lined with parchment paper, then press the mixture down. Place this in the fridge to chill. In another bowl, add 1 & 1/3 cups of sweetened condensed milk and 1/2 cup of lemon juice. Stir together, then add a 400g can of crushed pineapple and mix it in. Set it aside. Next, beat 1 & 1/4 cups of whipping cream in a bowl until soft peaks form. Add the whipped cream to the pineapple mixture and gently fold to combine.
