Ingredients:

Chocolate Pie Crust:

  • 1 1/4 cups of almond flour
  • 3 tbsp coconut flour
  • 1/4 cup cacao bliss (or 2 tbsp unsweetened cocoa powder)
  • 1/2 tsp baking powder
  • 1/2 tsp xanthan gum
  • 1/4 tsp salt
  • 4 tbsp butter, cubed and chilled
  • 1 tsp vanilla extract

Peanut Butter Filling:

  • 2/3 cup powdered sugar-free sweetener
  • 3/4 cup no-sugar creamy peanut butter
  • 6 oz cream cheese, softened
  • 3/4 cup heavy whipping cream

Whipped Topping:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar-free sweetener
  • 1 tsp vanilla extract

Directions:

Step 1

To your food processor, add 1 1/4 cups of almond flour, 3 tbsp coconut flour, 1/4 cup of cacao bliss, 1/2 tsp baking powder, 1/2 tsp xanthan gum, and 1/4 tsp salt. Give it a quick spin, then add 4 tbsp cubed butter and 1 tsp vanilla extract. Pulse well until everything is well crumbled. Transfer it to your pie pan and push it to the bottom evenly. Bake it at a 350 degrees F oven for nine minutes. While waiting, go ahead and make the peanut butter filling. In a large mixing bowl, add 2/3 cup powdered sugar-free sweetener, 3/4 cup no-sugar creamy peanut butter, and 6 oz softened cream cheese. Mix together with a handheld mixer until light and fluffy, then set aside. Whip 3/4 cup heavy whipping cream into another bowl until soft peaks form, then gently fold in half of it with the peanut butter mixture. Once combined, fold in the rest of the whipped cream. Add the peanut butter filling to the prepared pie crust, spreading it nicely and evenly.

Next, make the whipped topping. To a medium bowl, add 1 cup of heavy whipping cream. Mix it with a handheld mixer until thickened, then add 2 tbsp powdered sugar-free sweetener along with 1 tsp vanilla extract. Mix everything until soft peaks form, then add it on top of the pie. Place it in the refrigerator and let it set for two hours before serving. (You can also drizzle chocolate and add some crushed nuts on top.)
