This no-bake mango cheesecake recipe by Bake With Shivesh is unique because I haven’t seen one mango flavor before. I love how vibrant and fresh this cheesecake look, and recipes that require no oven is always convenient. This is an eggless cheesecake too. The instructions are so detailed and easy to understand so I cannot wait to try this recipe. I love the presentation of this mango cake, and it’s a creative way to make a fruity cheesecake. The color of the mango puree adds a beautiful bright pop of color to the cheesecake. I’m interested in trying this type of cheesecake because I wonder what the mango and cheesecake combination would taste like.
First, start off by making the base of the cheesecake. Crush biscuit cookies in the food processor. Once fully crushed, transfer to a large bowl and pour melted butter into the mix. Mix everything together until the biscuit is nicely coated in butter. Press the cheesecake base into a spring form pan and put it in the fridge for 30 minutes.
Next, add the rest of the ingredients in a large bowl and mix thoroughly. Pour the mango cheesecake mixture into the pan and let it sit completely in the fridge for about 4 hours or overnight.
This mango cheesecake can be topped with whipped cream and fresh mango slices. I’ve never thought about a mango cheesecake, but it sounds very fresh and refreshing. I love mangoes so this would be a neat experience to use up any mushy mangoes I might have laying around. Plus, this mango cheesecake filling looks soft and mousse-like.
