I always love lemon-flavored desserts because, for me, they always taste spectacular and unique. One of my favorite lemon desserts is this lemon lush from Whippoorwill Holler on Youtube. I have tried a lot of different versions of this recipe, but this, I guarantee, is the best version out there. It’s also a no-bake recipe, so it’s perfectly fine if you don’t have an oven. Try this today and see for yourself.

Ingredients:

  • 1 cup crushed pecans
  • 1 cup all-purpose flour
  • 1/2 cup melted butter
  • 8 oz softened cream cheese
  • 1 cup powdered sugar
  • 1 tbsp lemon juice
  • 16 oz cool whip, divided
  • 1 large box of instant lemon pudding
  • 3 cups of milk

Directions:

Step 1

Combine 1 cup of all-purpose flour and 1/2 cup melted butter in a bowl, stir it, then add 1 cup of crushed pecans and continue mixing until well combined. Spread this in a butter-greased 9 x 13 baking dish, pushing it down to the bottom. Place it in a 350 degrees F oven and bake for eight to ten minutes. While waiting, go ahead and make the filling. Combine 1 cup powdered sugar, 8 oz softened cream chees, and 1 tbsp lemon juice in a large mixing bowl and whisk with a handheld mixer. Keep whisking until smooth texture, then add 8 oz of cool whip. Change to a spatula, and gently fold the cool whip in together with the cream cheese mixture. Set aside.

Step 2

For the third layer, combine one large box of instant lemon pudding and 3 cups of milk in a bowl. Stir the mixture while gradually adding the milk, and just keep stirring til the mixture thickens. After this, place a plastic wrap over it and chill it in the fridge.

Step 3

Now, it’s time to assemble the lemon lush. Once the crust has cooled down, add dollops of the cream cheese mixture and spread it around. Then, add the third layer, which is the chilled lemon pudding mixture, and spread it out. For the fourth layer, add big dollops of 8 oz of cool whip and spread it around. Finally, break up some pecans and add them over the top (optional).
