Ingredients:

  • 3 cups heavy whipping cream
  • 2 tablespoons sour cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24-30 chocolate chip cookies

Directions:

First, combine the cream, sour cream, sugar, and vanilla in a bowl. Use a stand-up mixer or hand mixer to whip on high until cream is at stiff peaks. Place one layer of cookies in the bottom of a 9-inch springform pan. Break pieces of cookies to fill in any gaps. Spread some of the prepared whipped cream over the cookie layer and repeat the layers until it’s the whipped cream on top.

I think it would taste amazing with any kind of cookie, but I would combine this with a double chocolate chip cookie too. I would be interested in this cookie cake because it’s just cookies and whipped cream. The whipped cream would not be too heavy and would go well with the chocolate chip cookies.
