This no-bake coconut cream roll cake by Quick Simple & Delicious is a surprisingly refreshing treat you can easily make at home. This doesn’t contain any gelatin, eggs, and even condensed milk! It has a creamy taste and soft texture that everyone will surely enjoy. If you have family or friends coming over, go for this yummy dessert recipe.
Ingredients:
- desiccated coconut (amount depends on the size of the tray)
- 4 cups of milk
- 1 and 3/4 cups of all-purpose flour
- 0.25 oz of vanilla sugar
- 1/4 cup of butter
- 1 cup of whipping cream 35%
- 2 tablespoons of sugar
- 1/2 cup of walnuts (plus more for garnish)

Instructions:
Step 1:
Sprinkle some desiccated coconut on a baking tray until fully covered, then set it aside.
Step 2:
In a pot, pour 4 cups of milk. Next, add 3/4 cups of sugar, and 1 and 3/4 cups of all-purpose flour. Mix well using a whisk until lump free. You can strain the mixture to make sure there are no lumps left.
Step 3:
Place the pot over low heat. Cook while constantly stirring using a whisk until it bubbles and forms a thick consistency.
Step 4:
Once bubbling, add 0.25 oz of vanilla sugar, and 1/4 cup of butter into the mixture. Stir until well incorporated, then turn off the heat.
Step 5:
Pour the milk mixture into the desiccated coconut and spread evenly. Place in the refrigerator and chill for about 3 to 4 hours.
Step 6:
In a mixing bowl, add 1 cup of whipping cream 35%, and 2 tablespoons of sugar. Whip until firm peaks form.
Step 7:
Spread the cream on top of the chilled milk mixture evenly. Once done, cut it into 12 rectangular pieces. Chop 1/2 cup of walnuts into small pieces, then sprinkle on top of the cream. Roll the pieces carefully, then coat them more with the desiccated coconut.
Step 8:
Transfer to your serving plate, then garnish them with more walnuts on top. Serve and enjoy!
