You only need 6 ingredients to make this chocolate pie – dark chocolate, whipping cream, chocolate cookies, butter, vanilla extract, and icing sugar. It has two layers the crust and the filling. The crust is made of crushed chocolate cookies and melted butter. It adds a nice texture to the velvet-smooth filling.

Start by lining a pie plate with plastic wrap.
In a large bowl, add the crushed plain chocolate cookies and melted butter. Mix until well combined. It should look like wet sand.
Transfer the cookie crumb mixture to the pie plate. Press the cookie mixture down to the bottom and up to the sides.
In a microwave-safe dish, add the dark chocolate and 3/4 cup of whipping cream. Microwave on high for 2 minutes, stopping every 30 seconds to stir. It should be smooth and shiny. Set it aside to cool. It should be at room temperature. Once it is at room temperature, stir in vanilla extract and icing sugar. Set aside.
In a mixing bowl, add the remaining whipping cream and whip with a hand mixer until soft peaks. Add the chocolate mixture in three batches, while mixing at high speed.
Pour the chocolate mixture into the crust. Carefully smoothen it out. Place in the fridge and chill for at least 8 hours to set.
Once chilled and set, remove from the pie plate. Decorate if preferred. Slice and serve. Enjoy!
