I have tried it, and I must admit that no treats can compare to this 7-ingredient no-bake chocolate oatmeal cookie by Downshiftology. It’s rich, chocolatey, and irresistible. Did I already tell you that you don’t need an oven to make this recipe? You can make it at home with just your stovetop! How awesome is that? Ingredients:

  • 1/2 cup of butter (unsalted)
  • 1/2 cup of milk (dairy or dairy-free)
  • 2 cups of coconut sugar
  • 1/4 cup of cocoa powder or cocoa powder
  • 1/2 cup of almond butter
  • 1 teaspoon of vanilla extract
  • 3 cups quick cooking or rolled oats

Instructions:

Step 1:

Get 2 large baking sheets and line them with parchment paper. Set it aside.

Step 2:

Melt 1/2 cup of unsalted butter in a saucepan over medium-high heat. Add 1/2 cup of milk, 2 cups of coconut sugar, and 1/4 cup of cocoa powder. Stir everything together until it starts to boil. Allow it to boil for 2 minutes so that the sugar caramelizes, then turn off the heat. If you skip this part, your cookies will stay soft or if you over-boil, they’ll become crumbly.

Step 3:

Add 1 teaspoon of vanilla extract, 1/2 cup of almond butter, and 3 cups of rolled oats. Mix until everything is well combined.

Step 4:

Scoop the cookies onto the baking sheet using a medium-sized cookie scooper. Flatten each one using a spoon to your desired thickness.

Step 5:

Let the cookies cool at room temperature for about 30 minutes. This will allow them to set. You can also place it in the fridge for about 20 minutes until the cookies become firm.
