Ingredients:

  • 3 1/2 cups of graham cracker crumbs
  • 3/4 cup unsalted butter, melted and slightly cooled
  • 2 1/2 tsp kosher salt
  • 8 oz cream cheese, room temp
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream, chilled
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 2 cans (21 oz) cherry pie filling

Directions:

Step 1

To start, put your graham crackers in a food processor and blitz them until crumbs. Next, add the melted butter and 2 1/2 tsp kosher salt, and continue to process until everything is well combined. Set it aside. Now, make the whipped cream mixture. Add 8 oz room-temperature cream cheese, 3/4 cup granulated sugar, and 1 tsp salt in a large mixing bowl. Whisk using an electric mixer for about a minute. Next, add 2 cups of chilled heavy whipping cream and 1/4 tsp almond extract. Continue mixing until stiff peaks.

Step 2

Now, assemble the dessert. In a 9 x 13-inch casserole dish, add half of the graham cracker crumbs, pressing them firmly at the bottom, then layer half of the cream cheese mixture over evenly. Next, add two cans of cherry pie filling, then top it with the remaining cream cheese and graham cracker crumbs. Cover the casserole with a plastic wrap and chill the dessert overnight.
