Ingredients:

For the butterscotch praline:

  • 1/4 cup sugar
  • 1 tsp water
  • 1 tbsp cashew nut

For butterscotch sauce:

  • 1/2 cup sugar
  • 1 tbsp water
  • 4 tbsp butter
  • 1/2 cup whipping cream

For pudding:

  • 1/2 cup whipping cream
  • 3 – 4 tbsp butterscotch sauce
  • bread slice

Directions:

Step 1

In a pan, add 1/4 cup of sugar and 1 tsp water, then caramelized the sugar. After it is caramelized, add 1 tbsp cashew nut. Cook for 1 minute. Transfer it to a parchment paper and let it cool down. After it cooled down, break it, then crush it using a rolling pin. Set it aside. Next, back to the pan, add 1/2 cup of sugar and 1 tbsp water again, and caramelized it. Lower the heat if it started to turn brown. After this, add 4 tbsp of butter, then melt it. Add 1/2 cup whipping cream and cook for 3 – 5 minutes. The butterscotch sauce is now ready. Set it aside and let it cool down.

Step 2

In a bowl, add 1/2 cup whipping cream. Whisk until stiff peaks. Add 3 – 4 tbsp of butterscotch sauce and continue to whisk it. Dip two slices of bread into the room temperature butterscotch sauce and lay them down in a baking dish. Add the whisked whipping cream with butterscotch sauce into the baking dish and distribute it evenly. Sprinkle the crushed butterscotch and drizzle some butterscotch sauce. Place it in the fridge and chill for 1 to 2 hours.
