If you’re being health-conscious, apparently this cheesecake is only 200 calories per slice. This cheesecake is packed with protein and it’s lighter than normal cheesecake recipes. It has less added sugar than average. I love sweets and it’s nice to have a dessert that is healthy. When it comes to baked goods, it’s hard for me to avoid sugar since I have a sweet tooth. I need to give this recipe a try because it looks delicious. I used to be a health freak and only sought out healthy low-calorie desserts. So, I’m glad I came across this video on YouTube. This no-bake blueberry cheesecake looks light in texture and extra creamy on the inside.

Ingredients:

Crust:

  • 1/2 cup quick-cooking oats (45g)
  • 1/4 cup ground oats (25g)
  • 1/2 cup ground walnuts (65g)
  • 1.5 tbsp melted butter
  • 1.5 tbsp honey
  • 1.5 tbsp water

Filling:

  • 2 cups cottage cheese (450g)
  • 1 cup heavy cream (240ml)
  • 1/4 cup honey (85g)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

Blueberry topping:

  • 1 cup frozen blueberries (120g)
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp + 1 tsp chia seeds
  • 1/4 cup water

Directions:

First, strain the cottage cheese in a few layers of cheesecloth to remove some excess moisture. Then, transfer the cheese into a large bowl and blend until it’s smooth and creamy without the tiny grains.

Overall, I’m still blown away that each cheesecake slice from this recipe is only 200 calories.  Since this is not an ordinary cheesecake, do not put it in the freezer or it’ll lose its texture.
