I can’t think of something that can beat this mozzarella cheese potato pide from Ninik Becker on Youtube; they’re that delicious! It is one of my family’s comfort recipes, so I make this almost every day. I can’t blame them though – this garlic potato pide tastes so good. What’s more, it’s super easy to make! In a large bowl, add 1 1/2 tsp active dry yeast, 1 tsp sugar, and 1/2 cup of warm water. Mix well and cover it for ten minutes. After this, add 2 cups of all-purpose flour, 1 tsp salt, 1 tsp garlic powder, and 3 tbsp olive oil. Mix well until combined (add 1 – 2 tbsp of warm water if your dough is too dry), then transfer the dough to your working surface. Knead it for six to eight minutes, then cover it in a warm place for 60 to 90 minutes. After this, divide the dough into four equal sizes, then shape each into a ball.

Next, in a large bowl, add the sliced boiled potatoes, season them with salt, ground black pepper, and chili powder to taste, and add 1/2 cup of shredded mozzarella cheese. Mix and roughly smash into small pieces. Now, flatten one ball of dough into a thin oval, and roll up the edges inward to shape it like a boat. Press both ends to seal. Repeat these steps for the rest of the dough balls. Once done, divide the potato filling on each pide, and add shredded mozzarella cheese on top.
Place the pieces in the baking tray and cover for 30 minutes. After 30 minutes, brush beaten egg yolks on the dough and bake for 20 minutes at 400 degrees F oven. Serve them warm.
