Ingredients

  • precooking of flour: 1/2 cup of water and 2 tablespoons of all-purpose flour
  • 2 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1/2 cup of water
  • 1 teaspoon of instant dry yeast
  • 3 tablespoons of softened butter
  • fresh mozzarella cheese
  • salt
  • pepper
  • chili flakes
  • egg
  • parsley

Instructions

Step 1:

In a pan over low heat, add 1/2 cup of water and 2 tablespoons of all-purpose flour. Stir and cook until thick.

Step 2:

In a bowl, add 2 cups of all-purpose flour, cooked flour, 1 teaspoon of salt, 1 teaspoon of sugar, 1/2 cup of water, and 1 teaspoon of instant dry yeast. Mix using a paddle attachment for 1 minute. Change to a dough hook and 3 tablespoons of softened butter. Mix for about 5 minutes.

Step 3:

Transfer to a floured surface and sprinkle more flour. Knead until it’s no longer sticky and form into a ball. Cover it with a cloth for 1 hour.

Step 4:

Divide into 12 to 16 pieces. Form each one into a ball.

Step 5:

Add mozzarella cheese to a container and season with salt, pepper, parsley, and chili flakes.

Step 6:

Flatten the dough and fill it with a piece of cheese. Roll up to wrap the cheese. Repeat for each piece. Place on a baking pan and let them rest for about 30 to 60 minutes.

Step 7:

Brush the top with egg wash, then sprinkle parsley on top. Place inside the preheated oven and bake for 25 to 30 minutes at 356 Fahrenheit.
