Ingredients:

  • boneless chicken cut into 2-inch strips

Marinade:

  • 3/4 tsp white pepper powder
  • 1/2 tsp salt
  • 1 tsp light soy sauce
  • 1 egg white
  • 5 tbsp cornflour
  • 1 tbsp oil

Sauce:

  • 2 tbsp hoisin sauce
  • 1 tsp dark soy sauce
  • 1 tsp white vinegar
  • 1 tsp cayenne pepper
  • 1.5 tbsp brown sugar
  • pinch of salt

Rest of the ingredients:

  • 2 tbsp ginger, julienned to 1-inch
  • 10 cloves of chopped garlic
  • 1 tsp red chili flakes
  • 10 onion springs
  • corn slurry (1 tbsp cornflour mixed with 4 tbsp water)
  • 2 tbsp sesame oil
  • cooking oil, for deep frying

Directions:

Step 1

Season the chicken strips with 3/4 tsp white pepper, 1/2 tsp salt, and 1 tsp light soy sauce. Mix well and set aside for ten minutes. After ten minutes, add 1 egg white, 5 tbsp cornstarch, and 1 tbsp refined oil. Mix well and set aside for another ten minutes. Now, heat enough oil for deep frying in a large pan. Once the oil is hot enough, turn the heat down to medium heat and drop the coated chicken. Deep fry them for five to six minutes. After frying, set them aside on a plate. Next, combine 2 tbsp hoisin sauce, 1 tsp dark soy sauce, 1 tsp white vinegar, 1.5 tbsp brown sugar, and 1 tsp cayenne pepper. Mix well.

Step 2

Cut the onion spring into long stems, then the white part into halves. Heat 1.5 tbsp oil in a large pa (or wok) and add the chopped garlic and julienned ginger. Stir together, then add 1 tsp red chili flakes. Stir fry on high heat for about a minute, then add the white onion springs. Stir fry again for a minute, then add the sauce and three to four tbsp of water. Stir fry on high heat for 30 seconds. After this, add the fried chicken and continue stir-frying for another minute. Finally, add the green spring onions, mix everything for 30 seconds, then add the corn slurry and 2 tbsp sesame oil. Mix well.
