Ingredients:

  • 14 oz flank steak
  • 2 tbsp vegetable oil
  • 1 red onion, cut into wedges
  • 4cm piece of ginger, minced
  • 2 cloves of garlic, roughly chopped
  • 2 dried red chilis, roughly chopped
  • 1 tbsp cornflour mixed with 1 tbsp water (slurry)
  • 4 sprigs of onions (scallions), cut into batons

For the Marinade:

  • 1 tbsp soy sauce
  • 1 tbsp Chinese Shaoxing wine
  • 1/2 tsp baking soda
  • 3 tsp cornflour

Stir-Fry Sauce:

  • 1/4 cup soy sauce
  • 1/4 cup chicken stock
  • 3 tbsp brown sugar
  • 2 tbsp Chinese Shaoxing wine

Directions:

Step 1

To start, cut the flank steak in half with the grain, then cut against the grain into strips. Transfer them to a bowl, then add 1 tbsp soy sauce, 1 tbsp Chinese Shaoxing wine, 1/2 tsp baking soda, and 3 tsp cornflour. Mix everything well. In another bowl, make the sauce. Combine 1/4 cup soy sauce, 1/4 cup chicken stock, 3 tbsp brown sugar, and 2 tbsp Chinese Shaoxing wine and mix them well.

Step 2

In your preheated large pan (or wok), add 2 tbsp vegetable oil, then add the marinated beef. Spread them out and leave for a minute, then flip them. Let them cook again for a minute, then remove them from the pan. Next, add the chopped onions to the same pan (add more oil if necessary) followed by the minced ginger, chopped garlic, and chopped dried red chilis. Saute and deglaze the pan, then add the sauce. Give it a minute to bubble, then add the slurry to thicken the sauce. Mix well, then add the beef back. Add the chopped spring onions and toss everything well. Serve and enjoy!
