Add 3 large eggs, 1 cup of vegetable oil, 1 cup of brown sugar, and 1/2 teaspoon of salt to a big bowl. Whisk all the ingredients together. Next, add 1 teaspoon of cinnamon powder and 2 cups of all-purpose flour. Mix until smooth. Once done, add 2 cups of shredded carrots, 1/2 cup of walnuts, and 1/2 cup of chocolate chips. If you don’t like walnuts and chips, you can skip them. Mix well until well combined.
Line a 9″ x 5″ baking pan with parchment paper and grease the sides. Pour the cake batter and thump to spread evenly. Place in a preheated oven and bake at 338 degrees F for about 50 to 60 minutes. Once done, remove it from the oven and let it cool.
In a big bowl, add 1 cup of cream cheese, 1/4 cup of butter, and 1/4 cup of powdered sugar. Beat the ingredients until the mixture becomes creamy and smooth.
Remove the cake from the baking tray and transfer it to a plate. Spread the frosting on top. Top it with chopped walnuts, chocolate chips, and shredded carrots if desired. Slice then serve. Enjoy!
