Ingredients:

  • 1-3/4 cups of all-purpose flour
  • 2 cups of finely grated carrots (to make it finer use a food processor)
  • 1 cup of sugar
  • 4 eggs
  • 1-1/2 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 3/4 cup of vegetable oil
  • 1 tablespoon of orange juice
  • 3 tablespoons of orange zest
  • 2 tablespoons of raisins (optional)

Instructions:

Step 1:

Mix all dry ingredients. Add 1-3/4 cups of all-purpose flour, 1-1/2 teaspoon of baking powder, 1 teaspoon of baking soda, and 1/2 teaspoon of salt into a medium bowl. You can also sift them to break up the clumps. Mix all ingredients well.

Step 2:

In a separate bowl, crack 4 eggs. Whisk the eggs using a hand mixer. Continue whisking while adding 1 cup of sugar. Mix until the mixture turns creamy and pale. Next, add 3 tablespoons of orange zest and 1 tablespoon of orange juice while continuously whisking. Then pour 3/4 cup of vegetable oil.

Step 3:

Add the dry ingredients into the bowl of the egg mixture in two batches. Mix them gently after each batch using a spatula.

Step 4:

Add the finely grated carrots into the mixture. Fold the mixture until well combined.

Step 5:

Line a 7.87″ x 7.87″ round pan with parchment paper at the bottom. Pour the cake batter into the pan and add 2 tablespoons of raisins. If you don’t want raisin you can skip it.

Step 6:

Place in the oven and bake for 90 minutes at 340 degrees F. After 1 hour of baking, cover the top with aluminum foil to avoid burning.

Step 7:

Remove from the oven and let it cool for 15 minutes before removing it from the pan. After 15 minutes, remove it from the pan, take off the parchment paper and let it cool completely. Slice then serve. Enjoy!
