This cake only requires basic baking ingredients. If you love to bake, you probably already have most of the ingredients you need in your pantry. It’s easy to make and not as complicated as you might think. It’s perfect for birthday parties, gatherings, celebrations, or for a delicious weekend dessert. Add sugar in a large bowl, then sift in the flour, cocoa, baking soda, baking powder, and salt. Whisk to combine.
Make a well in the center, then add 2 eggs, vegetable oil, and milk. Gently whisk to combine. Add vanilla extract and whisk again until smooth and free of lumps. Do not overmix.
In a mug, add boiling water and coffee. Mix until dissolved.
Grease two round baking pans with butter on all sides, then line the bottom with parchment paper.
Pour the coffee into the mixture little by little, mixing after every addition. The batter might seem runny, but it will turn out perfect.
Divide the batter into the prepared molds. Gently tap the pan to remove air bubbles. Place in a 350F preheated oven and bake for 30 minutes. If they don’t fit in the same rack, just stagger them slightly on different levels.
Make the whipped cream. In a cold bowl, add chilled heavy cream and whisk until it starts to thicken. Add the sugar and continue whisking, gradually increasing the speed to medium. Whip for a few minutes until the cream thickens and stiff peaks.
Make the frosting. In a saucepan, add the egg yolks, and sugar. Mix until smooth. Add the heavy cream and stir until everything is well combined. Turn the heat to medium, then place the pan on the stove. Keep stirring as it heats up. Cook until it thickens. Be careful not to let it boil. Remove from the stove, then immediately add the chopped chocolate. Stir until melted.
Gently fold the chocolate mixture into the whipped cream.
Once the cake is done baking, let it cool in the mold for 10 minutes before removing. Once cooled, use a spatula to go around the edges, then gently tap so it comes out easily. Flip it into your cake stand and remove the parchment paper.
Spread the frosting, then top with the other cake layer. Cover the whole cake with the frosting.
