These mixed nuts breakfast cookies from My Simple Foods on YouTube are for those who love all kinds of nuts! Composed of almonds, cashews, sesame, pumpkin, and even raisins; these cookies are the perfect way to start your day.

All you have to do is mix all the nuts in one mixing bowl, season it with some salt and honey, mix it together, and then form them into cookies! It’s a quick and easy breakfast recipe that you can even make ahead of time. Watch the video below to learn the step by step instructions on how to make these fantastic breakfast cookies.


  • 1/2 cup whole almond
  • 1/2 cup cashew nuts
  • 3/4 cup sliced almond
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup goji berries
  • 1/4 cup raisins
  • 1/4 cup black sesame seeds
  • 1/4 cup white sesame seeds
  • 1 egg white
  • 1 tbsp honey
  • a pinch of salt


Step 1

Soak the raisins and goji berries in water and leave them for ten minutes. Next, grease and line your baking sheet with parchment paper, then add 1/2 cup whole almond and 1/2 cup cashew nuts. Roast them in the oven at 300 degrees F for ten minutes. Once done, transfer the nuts to a large mixing bowl, then add 1/2 cup pumpkin seeds, 3/4 cup sliced almond, 1/2 cup sunflower seeds, 1/4 cup black sesame seeds, 1/4 cup white sesame seeds, 1/4 cup soaked raisins, and 1/4 cup goji berries. Mix everything well together. Season with a pinch of salt and 1 tbsp honey, then add the egg white gradually. Stir together until combined.

Step 2

Using a cookie mold, shape the nuts into circles right into the prepared baking sheet. Press down the cookie to stay in shape before removing the cookie mold. Repeat these steps until you fill the baking sheet with cookies. Once done, place the baking sheet with cookies in a 300-degree F oven and bake them for fifteen minutes. Serve and enjoy!
