Ingredients:

  • 230g Cream cheese
  • 2 pcs Egg yolk
  • 30g, 15g, and 5g Sugar
  • 150g Milk
  • 1 pc Vanilla pod
  • 5g and 6g Gelatin powder
  • 25g and 30g Water
  • 10ml lemon juice
  • 240g Heavy cream
  • 180g Chocolate chip cookies
  • 25g Chopped almonds
  • 45g Unsalted butter
  • 150g Strawberry flavored juice

Directions:

Step 1

Insert the chocolate cookie chips in a zip lock bag, then crush it using a rolling pin. Transfer the crushed cookies to a bowl, add the chopped almonds and melted butter then mix it well. Prepare the small cookie mold by wrapping it with plastic and placing a paper disc on the bottom. Divide the cookie mixture into the mold with about 30g each. Press and flatten the top, then pop it in the freezer and let it harden for 30 minutes.

Step 2

Pour each batch of gelatin powder added with water in separate glasses or bowls, let it soak for 15-20 minutes. Loosen the softened cream cheese in a large bowl, then prepare the yolk and sugar mixture and set aside. Scrape the beans from the vanilla pod and add it to the milk, mix it well then add sugar. Bring it to a boil and pour onto the yolk and sugar mixture, stirring it well. Pour and transfer to a pot and bring to a boil, add the first portion of soaked gelatin, then mix well. Pour and strain over the cream cheese and whisk gently until well-combined.

Step 3

Transfer and strain onto a large bowl, add lemon juice and heavy cream, then stir. Pour the mixture into a piping bag and start piping it onto the cookie mold, leave space for the strawberry jelly and freeze it for about an hour. Mix the strawberry flavored juice in a bowl, add food coloring (optional), sugar, and soaked gelatin. Pour it on top of the cheesecake and put it back in the fridge for 4-5 hours to let the gelatin completely harden. To unmold the cheesecake easily, place the mold on top of a tall glass and wrap a hot towel around it then slide it down gently.
