I absolutely love these mini s’mores pie. They are actually quite addicting! The crunchy crust is perfect with the smooth and soft filling and marshmallow. It is a heavenly treat for all the chocolate lovers. Since they are in bite-sized pieces, they make the perfect dessert for parties or gatherings. Everyone can just grab one and take a bite – no need to slice.

Start by preheating your oven to 350F.
In a bowl, add the crushed graham crackers, melted butter, and sugar. Mix until all crumbs are moistened with butter.
Fill each foil cupcake liners with crumbs halfway through, then press with a small spoon or fingers to form the crust.
Place inside the preheated oven and bake for 5 to 7 minutes, until they are just starting to turn golden brown. Set aside.
Lower the oven temperature to 275F.
In a microwave safe bowl, add the cream, butter, and sugar. Mix then microwave for 90 to 120 seconds. Stir it halfway through.
Stir in the chopped chocolate until all melted.
In a separate bowl, whisk 3 eggs and 2 yolks. While stirring, add a small amount of the warm chocolate/ cream mixture into the eggs. This will gently warm up the eggs so they don’t scramble.
Pour the egg mixture back into the chocolate/cream mixture and stir until well combined.
Pour the chocolate filling over the crust leaving about 1/4 to 1/3 of an inch on top.
Bake for about 15 to 17 minutes until set and wobbles slightly when shaken.
Turn on the broiler to high setting. Top each pie with a marshmallow. Place them in the broiler then broil until the marshmallows begin to char and brown.
