Here’s a snack that’s flavorsome and perfect for big groups. This is the mini pita chicken bites recipe by Yummyyy y on Youtube. It’s a dish that will surely make everyone’s mouth water. Cut the chicken into thin strips or pieces.
Place chicken into a bowl. Add 1 tablespoon of ginger garlic paste, salt, 1 tablespoon of crushed black pepper, and 1 lemon juice. Mix until well incorporated, then cover it with cling wrap. Refrigerate for about 30 minutes.
In a large frying pan or wok, add oil and marinated chicken. Cook over medium heat for about 25 to 30 minutes. Once done, remove it from the heat and let it cool.
In a small bowl, combine the mayonnaise, sriracha, and ketchup. Mix it well.
Pour the sriracha-mayo sauce over the chicken and mix until well-coated. Cover it and set it aside.
In a medium-sized bowl, add 1 cup of warm water, 1 teaspoon of sugar, and all the yeast. If foam and bubbles form within 5 to 10 minutes the yeast is alive and active. Next, add 4 cups of flour, 2 teaspoons of salt, and 2 tablespoons of oil. Knead the mixture for 5 to 10 minutes. Form it into a ball and pour 1 tablespoon of oil. Cover it with plastic and leave it until it doubles in size.
Remove the air from the dough and transfer it to a floured surface. Flatten the dough using a rolling pin, then using a fork, poke small holes all over it.
Cut out small circles on the dough, then cover it with plastic.
Place a skillet over medium-high heat and grease. Cook the mini pita bites until lightly browned on both sides. Transfer on a plate and keep it covered in a damp paper towel to keep them moist, warm, and soft.
Add some finely chopped cucumber, red onion, and cooked chicken to a mini pita. Fold and serve with tea. Enjoy!
