To make these mini cakes at home, you only need 7 ingredients – yellow cake mix, canned pineapple slices, oil, eggs, maraschino cherries, butter, and brown sugar. There is nothing easier than this recipe. The melted sugar on top, combined with the fruity flavors is just heavenly. I can have this any time of the day. Try this easy dessert recipe at home, but make sure to make two batches, as it will be an instant hit.

Pour out the juice from the canned pineapple slices into a mug and set aside for later. You need 1 cup of the juice. If it’s not enough, just add a little bit of water.
Line a plate with a paper towel and place all 10 pineapple slices. Do the same with 10 cherries.
In a large bowl, add the cake mix, 1 cup of pineapple juice, 1/2 cup of oil, and 3 eggs. Beat well until well combined. Make sure to scrape the sides.
Melt 4 tablespoons of butter. Grease jumbo-size muffin pans and grease them with cooking spray. Clean the top with a paper towel.
Fill each cup with 1 teaspoon of butter. Next, fill each one with 1 tablespoon of sugar. Spread it around a little bit.
Add the pineapple slices to each cup. Once done, place the cherries in the center of each pineapple.
Preheat your oven to 325F.
Add 3 heaping tablespoons of the batter to each cup. Clean the top of the pan before you put it inside the oven. Place inside the preheated oven and bake for 30 minutes. To check if it’s done, take a toothpick and insert it in the center of the muffin. If it comes out clean, your muffin is ready. Remove from the oven and let it rest for 8 minutes.
Take a plastic knife and run it around the edge of each muffin. Place a cookie sheet on top and flip it over to remove the muffins from the pan. Gently remove the muffin pan. Immediately serve and enjoy!
