Ingredients:

  • 31 pcs Oreo cookies
  • 1/4 cup butter, melted
  • 14 oz cream cheese
  • 400 ml cream, divided
  • 1/2 cup sugar
  • 1 tbsp all-purpose flour
  • 1 tbsp cornstarch
  • 2 eggs, room temp
  • 6.3 oz dark chocolate

Directions:

Step 1

To start, line your cupcake tray with cupcake liners, then set aside. Next, separate all the Oreo cookies from their cream. After this, place just 23 pieces (set aside the rest), put them in a food processor, and blitz them until fine. Add 1/4 cup melted butter and continue to mix until well combined. Once done, divide the mixture into the prepared cupcake tray and press them to the bottom.

Step 2

In a bowl, add 14 oz cream cheese, 200 ml cream, and 1/2 cup sugar. Mix using an electric mixer on low speed for two to three minutes. After this, add 1 tbsp cornstarch and 1 tbsp all-purpose flour. Continue mixing until well combined, then fold in two eggs. Blitz the remaining Oreo cookies and add them to the cream mixture.

Step 3

Now, divide the cream mixture into the cupcake tray, then bake it in a preheated 325 degrees F oven for 20 minutes. Once done baking, allow it to cool completely, then refrigerate it for 40 minutes. In the meantime, make the chocolate ganache. In a pot, add 200 ml of cream and stir over medium heat. Once it boils, turn off the heat, and add the dark chocolate. Mix it until the chocolate fully dissolves. Now, top each cheesecake with the chocolate ganache and refrigerate for 30 minutes to let them set. Serve and enjoy!
