Ingredients:

  • 1/2 cup dry sparkling white wine
  • 2 tbsp grated orange zest
  • 1/2 cup orange juice
  • 5 garlic cloves, smashed
  • 1 tbsp table salt
  • 2 tsp ground coriander
  • 1/4 tsp red pepper flakes
  • 2 lb boneless, skinless chicken thighs, trimmed
  • 2 quarts vegetable oil

Coating:

  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups cornstarch
  • 4 tsp ground coriander, divided
  • 2 tsp granulated garlic
  • 2 tsp baking powder
  • 2 tsp table salt
  • 2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 3 tbsp water

Directions:

Step 1

Add 1/2 cup dry sparkling white wine to a large mixing bowl followed by 1/2 cup orange juice, 2 tbsp grated orange zest, 5 smashed garlic cloves, 1 tbsp table salt, 2 tsp ground coriander, and 1/4 tsp red pepper flakes. Whisk together until combined. Next, submerge the chicken thighs into the marinade and marinate for at least an hour covered in the refrigerator.

Step 2

Now, make the coating. Add 1 1/2 cups all-purpose flour in another bowl followed by 1 1/4 cups cornstarch, 4 tsp ground coriander, 2 tsp granulated garlic, 2 tsp baking powder, 2 tsp black pepper, 2 tsp table salt, and 1/2 tsp cayenne pepper. Whisk until well combined, then add 3 tbsp water. Rub it together with your hands to create those little craggy things.

Step 3

Once done, drop the marinated chicken into the batter, then arrange them on a baking sheet. After this, place the baking sheet in the refrigerator and let the chicken sit for 30 minutes to two hours. Preheat 2 quarts of oil in a heavy-bottomed pan to 350 degrees F, then gently drop the chicken. Deep fry each for seven minutes or until nicely browned.

Step 4

After frying, lay them over a paper towel to remove excess oil. Once the chicken is cooled, assemble the sandwich. Slice the biscuit in half, add a layer of slaw, add a piece of chicken, then place the top biscuit. Add a poached egg (optional) on top and serve. Enjoy!
