Place a pot over high heat and add the ground beef. Break it into pieces and cook until browned. Strain the fat and reduce the heat to medium. Next, add the Italian sausage and cook until it’s mostly done.
Add the chopped onions and bell pepper. Continue to cook until the onion is translucent. Next, add the minced garlic and cook for a minute. Season with salt and pepper.
Add the pasta sauce and mix well. Add sugar as needed to balance the acidity.
Cover it with the lid and let it simmer on low for about 30 to 45 minutes. Make sure to stir occasionally.
Boil water in a pot and add a good amount of salt. Make sure to taste your water. It should taste salty. If it doesn’t, you want to add more salt. Cook the spaghetti based on your package instructions.
Make the cheese sauce. In a mixing bowl, add the sour cream, cottage cheese, cream cheese, chopped green onions, salt and pepper. Mix everything until well combined.
Preheat your oven to 375F.
Add some of your meat sauce on the bottom of a 9 x 13 casserole dish and spread it evenly. Sprinkle some grated parmesan cheese. Next, add all the spaghetti in an even layer.
Add the cheese sauce and spread it across the spaghetti as evenly as possible.
Pour all the remaining meat sauce on top of the cheese, making sure to cover everything. Sprinkle 16 oz of grated mozzarella cheese, followed by dried parsley on top.
Place inside the oven and bake for about 30 to 45 minutes or until the cheese is melted and golden brown. Turn it to broil in the last three minutes.
Once done baking, you can serve it immediately or let it rest for about 10 to 15 minutes. Enjoy!
