To make these milk toffee candies, you only need 7 ingredients – sweetened condensed milk, milk, sugar, salt, vanilla extract, butter, and cashew nuts. They are very easy to make and always a crowd favorite. The melt-in-your-mouth texture is just irresistible. Place a heavy wide bottom pan over medium heat, and add the condensed milk, milk, and sugar. Allow it to cook till the sugar has melted and the two kinds of milk have mixed well.
Add the salt and mix. Continue cooking till thickened and reduced while stirring continuously for about 25 minutes.
Turn the heat to medium-low and add the butter and vanilla extract. Let it cook for another 5 to 8 minutes, then remove from heat. Test if it is holding its shape, by dropping a blob of the mixture into a small bowl filled with ice-cold water. Leave it from a second or two, then remove it. If it holds its shape and forms into a ball, it’s ready.
Immediately add the chopped cashew nuts and stir until well incorporated.
Transfer it onto a plate and keep stirring until it’s cooled down.
Once it becomes into a loose dough, set it aside and brush butter on two sheets of parchment paper. Lay one buttered parchment on your work surface and place the cooled milk toffee. Flatten it using a spatula, then gently roll it out to the desired thickness.
Cut into small squares, then set aside to cool completely before you separate each piece.
