1. Mushroom & Parmesan

  • 2 small eggs
  • 2 tbsp finely chopped cremini mushroom
  • 1 tbsp shredded parmesan
  • 1 tbsp half-and-half
  • a pinch of garlic powder
  • salt and ground black pepper

Directions:

Grease a 5 oz cup with nonstick cooking spray, then crack two small eggs. Add 1 tbsp half-and-half, a pinch of salt, ground black pepper, garlic powder, and 1 tbsp shredded parmesan. Mix and beat the eggs until smooth, then stir in 2 tbsp finely chopped cremini mushroom. Microwave for 30 seconds, another 30 seconds, then 10 seconds. Serve.

2. Spinach & Feta

  • 2 small eggs
  • 5 – 6 spinach leaves, chopped
  • 1 tbsp crumbled feta cheese
  • 1 tbsp half-and-half
  • a pinch of onion powder
  • salt and ground black pepper

Directions:

Grease a 5 oz cup with nonstick cooking spray, then crack two small eggs. Add 1 tbsp half-and-half, a pinch of onion powder, salt, and ground black pepper. Mix and beat the eggs until smooth. Add 1 tbsp crumbled feta cheese and five to six chopped spinach leaves. Mix well. Microwave for 30 seconds, another 30 seconds, then 10 seconds. Serve.

3. Bell Pepper & Cheddar

  • 2 small eggs
  • 2 tbsp finely diced bell pepper
  • 1 tbsp shredded cheddar cheese
  • 1 tbsp half-and-half
  • a pinch of onion powder
  • salt and ground black pepper

Directions:
