If you like cooking in the microwave, you will love this recipe for beef stroganoff casserole with green beans. Why I had never thought of making Beef Stroganoff in the microwave is beyond me. I saw a recipe for crockpot Beef Stroganoff Casserole made with delicious egg noodles on Youtube by Pampered Chef and had to try it, after all, I love Beef Stroganoff and I also love my microwave so it was an obvious match made in Heaven for me. The recipe couldn’t be easier, I just sliced my mushrooms and added my meat and flour to my microwavable casserole and the stroganoff practically makes itself. The really cool addition to this somewhat traditional beef stroganoff recipe is green beans, which makes the beef stroganoff more of a casserole. Cooking this stroganoff recipe in the microwave certainly saves time, but this recipe could easily be made on a stovetop or crockpot if you so choose.

Ingredients:

  • 8 ounces white mushroom
  • 2 cloves cloves
  • 2 tablespoon flour
  • 1/2 teaspoon salt
  • 8 ounces of ground chuck beef
  • 6 ounces of green beans
  • 1 1/2 teaspoons All-Purpose Dill Mix (divided)
  • 4 ounces (2 cups) egg noodles
  • 1 3/4 cups beef broth
  • 1/2 cup french fried onions
  • 1/4 cup Panko bread crumbs
  • 1/2 cup sour cream

Directions:

First, you will put the sliced mushrooms, ground beef, garlic, salt, pepper, and flour into your microwavable dish and mix it up well then microwave for 7 to 9 minutes.

Make a ground beef casserole with egg noodles

Then, you will add your egg noodles, green beans, dill seasoning, and beef broth and cook in the microwave for 8 to 10 minutes.

Make microwave ground beef stroganoff casserole

This recipe is good for a very quick meal to feed a hungry family.
