This Mexican pizza casserole Taco Bell copycat recipe by Catherine’s Plates is way better than anything I have tried. The flavors are incredible! It’s perfect for groups or gatherings at home. You have to try this recipe – I’m sure everyone in your family will love it.

Preheat your oven to 375F and spray a 9×13 casserole dish with non-stick cooking spray.
Place a large skillet over medium-high heat, and brown the ground beef with onion. Remove grease. Add taco seasoning, water, green chilies, diced tomatoes, and 5 oz enchilada sauce. Stir all ingredients well. Let it simmer for about 2 to 3 minutes, then turn off the heat.
Add 2.5 oz of enchilada sauce into the prepared casserole dish, covering the bottom, sides, and corners.
Cut all flour tortillas in half.
For the first layer (bottom), place 7 tortilla halves over the sauce in the baking dish in an even layer. Next, spread refried beans on the tortillas in the baking dish, followed by 1/3 of the meat mixture, then 1/3 of the shredded cheese.
For the second layer (middle), place another layer of tortilla halves followed by 1/2 of the remaining meat mixture. Sprinkle 1/2 of the green onions and chopped cilantro on top, then sprinkle 1/2 of the remaining shredded cheese.
Place the final layer of tortilla halves for the last layer. Add the remaining meat mixture over the tortillas. Spread the rest of the enchilada sauce on top of the meat mixture, then sprinkle the remaining green onions and chopped cilantro. Top it with the remaining shredded cheese.
Place inside the preheated oven for about 40 to 45 minutes until the cheese is melted and it’s bubbling. Once done baking, remove from the oven and let it rest for about 5 to 10 minutes before slicing.
