While I was searching for a quick pineapple dessert yesterday, I found this pineapple casserole from MeMe’s Recipes | Diane Leary on Youtube. I immediately tried it as it looked so good, and boy, was I not wrong. It may look simple, but the texture is admittingly new to me, and I like the contrast of flavors. This will be a good dessert to bring on potlucks or serve at gatherings as it is quite simple to make, inexpensive, and can feed a large group of people. This will surely become one of my go-to recipes whenever I need something quick and easy to make. Your family will love this for sure. Try this today and see for yourself. Ingredients:

  • 2 cans (20 oz each) of pineapple chunks, drained
  • 1 1/2 cups of sugar
  • 5 tbsp of self-rising flour
  • 1 cup of shredded sharp cheese
  • 1/2 cup of reserved pineapple juice
  • 1 stick of butter, melted
  • 20 – 25 crushed Ritz crackers

Directions:

Step 1

Preheat your oven to 350 degrees F. Next, in a bowl, combine the drained pineapple chunks and 1 1/2 cups of sugar. Mix it well. After this, add 5 tbsp of self-rising flour and continue to mix everything. Now, mix in 1 cup of shredded sharp cheese, then transfer the mixture into your casserole dish, spreading them evenly.

Step 2

Now, pour in 1/2 cup of reserved pineapple juice over. Set it aside. Next, combine one stick of melted butter and 20 – 25 crushed Ritz crackers. Mix them well, and add it to the top of the pineapple. Place the casserole dish in the oven and bake it at 350 degrees F for 30 minutes or until the Ritz crackers are nice and toasty on top. Serve and enjoy!
