Are there any winter treats cuter than Brebrewalsh‘s melted snowmen shortbread cookies? I bet you won’t find anything more adorable! They are so cute that I almost don’t want to eat them. They are also surprisingly delicious. Perfect for kids’ parties or a fun weekend snack to make at home with the kids.

The base is a shortbread cookie made using butter, sugar, vanilla extract, almond extract, salt, and all-purpose flour. The snowman’s body is a marshmallow cut in half, and the melted part is royal icing. Making these cookies is so easy and enjoyable. Watch the video below for full instructions. Happy baking!

Make the icing by mixing powdered sugar, cream of tartar, and water in a bowl. Transfer to a piping bag for later use.
In a medium bowl, add 1 cup and 1 tablespoon of room-temperature butter, and 1 cup of icing sugar. Whisk until well combined using a hand mixer.
Add 1 teaspoon of vanilla extract and 1/2 teaspoon of almond extract. Whisk to combine.
Add 2 1/4 cups of flour. Mix until just combined. Scrape down the edges and bring it all together.
Take a sheet of cling wrap and lay it flat on your work surface. Transfer the dough and cover it with the top and bottom of the cling wrap. Make a log that’s around 2 inches wide. Place in the freezer for 2 hours or overnight.
After 2 hours, cut the log into 1/4″ rounds. Place them on a lined sheet pan. They don’t spread that much so you don’t need a lot of room. Bake the cookies at 375F for 10 minutes. Once done, place them on a cooling rack.
Cut the marshmallows in half and stick them down to the cookies slightly off the center.
Flood icing over the top of the marshmallow and down the edges. Take 2 mini chocolate chips and place them on top of the marshmallows to make the eyes, then 2 to 3 chocolate chips down the cookie for the buttons. Add a single orange sprinkle between the eyes for the nose. Repeat with the remaining cookies. Serve and enjoy!
