I always try different salad recipes every summer, and one of the recent ones that I made is this Mediterranean chickpea salad by Dish and Devour Recipe. It was so easy and quick to prepare. The combination of tomatoes, cucumber, garbanzo beans, olives, onion, and homemade dressing is incredibly delicious! You can even add meat like chicken, or other vegetables if you want. It’s perfect for potlucks or as a summer side dish.

In a large bowl, add the garbanzo beans, followed by chopped cucumber, halved cherry tomatoes, mixed bell peppers, chopped olives, and sliced onion. Toss everything together until well combined. Add the chopped parsley on top and toss again. Place in the refrigerator and let it chill for about 30 minutes.
In a container or small bowl, add minced garlic, 1 tablespoon of lemon juice, 1 tablespoon of honey, 1 tablespoon of white vinegar, 2 tablespoons of olive oil, salt, and freshly ground black pepper. Whisk everything until well combined.
After 30 minutes, remove the salad from the refrigerator. Pour the homemade dressing and add the feta cheese and freshly ground black pepper. Toss all ingredients with a spoon until well combined.
Serve and enjoy!
