Ingredients:

  • 1 cup orzo
  • 1 lb boneless skinless chicken thighs
  • 1/4 red onion
  • 1 English cucumber
  • 1 cup grape tomatoes
  • 1 cup fresh parsley
  • 1/2 cup freshly grated parmesan
  • 1/2 cup green olives
  • 1 tbsp chicken seasoning
  • 1 tsp butter
  • 2 1/2 tbsp olive oil
  • 1 lemon
  • sea salt
  • ground black pepper

Directions:

Step 1

Bring a pot full of water to a boil. In the meantime, dice one English cucumber and add it to a large salad plate. Next, dice the grape tomatoes as well and add them to the plate together with the cucumber. Back to the pot, add salt and 1 cup orzo pasta, then give it a good stir. Let the orzo cook.

Step 2

Now, heat a large pan over medium heat, then add 2 1/2 tbsp olive oil and 1 tsp butter. Once the butter melted, add the chicken thighs. Season each with 1 tbsp chicken seasoning. Fry each side for six to eight minutes or until browned nicely. (Season the other side of the chicken as well once you flip them.) In the meantime, chop your red onion and a handful of parsley and add them to the salad plate. Then, freshly grate 1/2 cup worth of parmesan over the veggies.

Step 3

Once the orzo is finished cooking, strain it and add it to the salad plate. Season everything with some salt and ground black pepper, then drizzle some olive oil and the juice of one lemon. Toss everything well to combine, then serve topped with the chicken and some green olives.
