I love my cast iron skillet so much! I love to fry chicken in my cast iron, sautee in it, sear steaks in my cast iron skillet too. Until I saw this excellent fruitcake made in a cast-iron skillet video recipe tutorial by Martha Stewart on YouTube. Ingredients:

  • 4 tablespoons of unsalted butter (left to sit till room temperature, plus a little more for the skillet)
  • 1 cup all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • Coarse salt
  • 3/4 cup plus 2 tablespoons of sugar
  • 1 large egg
  • 1/2 cup low-fat buttermilk
  • 2 ripe medium-size plums (thinly sliced)
